Ingredients:

  • 4 Large Egg Whites (approx. 120g), room temperature
  • 1 cup (225g) Superfine Caster Sugar
  • 0.5 tsp Cream of Tartar
  • 1 tsp Pure Vanilla Bean Paste
  • 0.25 tsp Fine Sea Salt
  • 2 drops Gel Food Coloring (Forest Green)
  • Gold Star Sprinkles
  • Nonpareils

Instructions:

  1. Preheat oven to 200°F (93°C) and line two large baking sheets with silicone mats or parchment paper.
  2. Wipe the mixing bowl with lemon juice to ensure it is grease-free. Whisk egg whites, salt, and cream of tartar on medium-low speed until foamy.
  3. Increase mixer speed to medium-high and add the caster sugar one tablespoon at a time, allowing it to fully incorporate. Continue whisking until the mixture is thick, glossy, and holds a stiff peak.
  4. Gently fold in the green gel food coloring and vanilla bean paste until the color is uniform.
  5. Transfer the meringue to a piping bag fitted with an open star tip (Wilton 1M or 2D). Pipe tapered tree silhouettes by creating three decreasingly smaller stars stacked on top of each other.
  6. Decorate with gold star sprinkles on top and multicolored nonpareils as ornaments. Bake for 90 minutes until firm and dry.
  7. Turn off the oven and allow the trees to cool completely inside the oven with the door slightly ajar to prevent cracking.
