Ingredients:
- 4 Large Egg Whites (approx. 120g), room temperature
- 1 cup (225g) Superfine Caster Sugar
- 0.5 tsp Cream of Tartar
- 1 tsp Pure Vanilla Bean Paste
- 0.25 tsp Fine Sea Salt
- 2 drops Gel Food Coloring (Forest Green)
- Gold Star Sprinkles
- Nonpareils
Instructions:
- Preheat oven to 200°F (93°C) and line two large baking sheets with silicone mats or parchment paper.
- Wipe the mixing bowl with lemon juice to ensure it is grease-free. Whisk egg whites, salt, and cream of tartar on medium-low speed until foamy.
- Increase mixer speed to medium-high and add the caster sugar one tablespoon at a time, allowing it to fully incorporate. Continue whisking until the mixture is thick, glossy, and holds a stiff peak.
- Gently fold in the green gel food coloring and vanilla bean paste until the color is uniform.
- Transfer the meringue to a piping bag fitted with an open star tip (Wilton 1M or 2D). Pipe tapered tree silhouettes by creating three decreasingly smaller stars stacked on top of each other.
- Decorate with gold star sprinkles on top and multicolored nonpareils as ornaments. Bake for 90 minutes until firm and dry.
- Turn off the oven and allow the trees to cool completely inside the oven with the door slightly ajar to prevent cracking.
