Ingredients:
- 1 lb fresh strawberries
- 9 oz 70% dark chocolate
- 1 tsp virgin coconut oil
- 1 pinch flaky sea salt
- 2 oz white chocolate
- 2 tbsp crushed pistachios
Instructions:
- Rinse 1 lb fresh strawberries under cold water. Note: They must be bone dry. Pat each one with a paper towel and let them air dry for 30 minutes.
- Finely chop 9 oz 70% dark chocolate. Note: Smaller pieces melt more evenly and won't burn.
- Place chocolate and 1 tsp virgin coconut oil in a double boiler over low heat.
- Use a spatula until the mixture is glossy and completely liquid.
- Stir in a pinch of flaky sea salt once the chocolate is off the heat.
- Hold a strawberry by the stem and dip it into the chocolate, swirling slightly until coated three quarters of the way up.
- Lift the berry and let the excess chocolate drip back into the bowl for 5 seconds.
- Set the berry on the prepared sheet. If you're using this Valentine Strawberries recipe style, leave space between each.
- Melt 2 oz white chocolate, drizzle over the set dark chocolate, and immediately sprinkle 2 tbsp crushed pistachios.
- Let them sit at room temperature for 30 mins until the surface looks matte and firm.
