Ingredients:

  • 240g (2 1/2 cups) Old-Fashioned Rolled Oats
  • 250g (1 cup) Creamy Natural Peanut Butter
  • 120ml (1/2 cup) Honey or Pure Maple Syrup
  • 60g (1/2 cup) Mini Semi-Sweet Chocolate Chips
  • 45g (1/3 cup) Ground Flaxseed or Chia Seeds
  • 5ml (1 tsp) Pure Vanilla Extract
  • 1.5g (1/4 tsp) Fine Sea Salt

Instructions:

  1. Place the 240g of Old-Fashioned rolled oats, 45g of ground flaxseed, and 1.5g of sea salt into a large mixing bowl.
  2. Toss in the 60g of mini semi sweet chocolate chips. Do this now so they get coated in a light dusting of flax, which helps them stay suspended in the dough.
  3. Pour in the 250g of creamy peanut butter, 120ml of honey, and 5ml of vanilla extract.
  4. Use a sturdy spatula to fold the mixture until no dry oat patches remain. Mix until the dough is heavy and uniform.
  5. Cover the bowl and place it in the chiller for at least 20 minutes.
  6. Remove from the cold and press a small amount between your fingers. It should feel tacky but not leave a thick residue on your skin.
  7. Use a small cookie scoop or a tablespoon to portion out roughly 19 balls.
  8. Roll the portions between your palms to create smooth spheres.
  9. Place the finished balls on a parchment lined tray and chill for another 10 minutes to lock in the shape.
