Ingredients:
- 1 pre-baked 9-inch deep-dish pastry shell
- 1 can (14 oz) Sweetened Condensed Milk
- 1/2 cup Freshly squeezed lemon juice
- 1 tbsp Lemon zest, finely grated
- 3 Large egg yolks
- 1/2 tsp Vanilla extract
- 3 Large egg whites, room temperature
- 1/4 tsp Cream of tartar
- 6 tbsp Granulated white sugar
Instructions:
- Preheat your oven to 350 degrees Fahrenheit.
- In a medium bowl, combine the 14 oz can of Sweetened Condensed Milk, 1/2 cup of lemon juice, 1 tbsp of zest, 3 egg yolks, and 1/2 tsp vanilla
- In a clean glass bowl, beat the 3 egg whites and 1/4 tsp cream of tartar
- Gradually add the 6 tbsp of granulated sugar, one tablespoon at a time
- Bake for 12–15 minutes until the meringue is firm and the peaks have turned a rich mahogany brown.
- Let it cool completely at room temperature for at least 1 hour.
