Ingredients:

  • Tablespoons Chili Powder (mild or medium)
  • Tablespoons Ground Cumin
  • Tablespoon Smoked Paprika
  • Teaspoons Dried Oregano (Mexican preferred)
  • Teaspoon Garlic Powder
  • Teaspoon Onion Powder
  • Teaspoon Fine Sea Salt
  • ½ Teaspoon Freshly Ground Black Pepper
  • ½ Teaspoon Ground Coriander
  • ¼ Teaspoon Cayenne Pepper (optional)
  • Teaspoon Cornstarch or Arrowroot Powder (optional)

Instructions:

  1. Carefully measure all listed dry spices (Chili Powder through Cayenne, plus optional cornstarch) into a small mixing bowl.
  2. Use a small whisk or fork to mix all ingredients thoroughly until the colour is uniform and there are no visible clumps of any single spice.
  3. Taste a tiny pinch of the seasoning blend to gauge the flavour intensity. Adjust salt or heat as necessary.
  4. Transfer the finished Homemade Taco Seasoning blend to an airtight storage container and label clearly.
  5. To use: Brown 1 lb (450g) of protein (meat or vegetarian substitute) in a skillet over medium-high heat. Drain excess fat.
  6. Reduce heat to medium-low. Sprinkle 2–3 heaped tablespoons of the seasoning blend over the browned protein.
  7. Add ½ cup (120ml) of water or broth. Stir well to combine the seasoning evenly throughout the filling.
  8. Simmer uncovered for 5–8 minutes, stirring occasionally, until the liquid has evaporated and the mixture has thickened, clinging nicely to the meat.
