- Tablespoons Chilli Powder (Mild/Medium blend)
- Tablespoons Smoked Paprika (Sweet or Hot)
- Tablespoons Ground Cumin
- Tablespoon Dried Oregano (Mexican preferred)
- Teaspoon Onion Powder
- Teaspoon Garlic Powder
- Teaspoon Fine Sea Salt (Adjust to taste)
- Teaspoon Black Pepper (Freshly ground)
- ½ Teaspoon Ground Coriander
- ¼ Teaspoon Cayenne Pepper (or to taste)
- Teaspoon Cornstarch (Optional binder)
Instructions:
- Accurately measure all listed spices, salt, pepper, and optional cornstarch into a small mixing bowl.
- Use a small whisk or fork to thoroughly combine all ingredients. Whisk until the colour is uniform—no pockets of pure paprika or chilli powder!
- Dip a clean, dry finger into the mix and taste it. Assess the salt and heat levels, adjusting as necessary now before using it in meat.
- Transfer the completed seasoning mix into a clean, airtight jar and label clearly for storage.
- Usage Instruction (For 1lb/450g Ground Meat): Brown 1lb of ground beef or beans. Drain off excess fat. Sprinkle 3 Tablespoons of your homemade seasoning blend over the meat. Add ½ cup (120ml) of water or broth. Simmer gently until the liquid reduces to a thick, glossy coating, about 5-7 minutes.
