Ingredients:
- 6 large eggs
- 1/2 cup mayonnaise
- 1 tsp Dijon mustard
- 1 tbsp sweet or dill pickle relish
- 1/2 tsp lemon juice
- 1/2 cup finely diced celery
- 2 tbsp fresh chives, minced
- 1/4 tsp smoked paprika
- 1/4 tsp salt
- 1/8 tsp black pepper
Instructions:
- Place eggs in a single layer in a saucepan and cover with water by one inch. Bring to a rolling boil over high heat.
- Remove the pan from heat immediately once boiling, cover with a lid, and let sit for 10-12 minutes.
- Transfer eggs to an ice water bath for 5 minutes. Gently crack the shells and peel under cold running water.
- In a large mixing bowl, whisk together mayonnaise, Dijon mustard, relish, and lemon juice until smooth.
- Roughly chop the hard-boiled eggs into 1/2-inch pieces and fold them into the dressing along with the diced celery and chives.
- Season with salt, black pepper, and a dusting of smoked paprika. Mix gently to combine.
