Ingredients:

  • 6 large eggs
  • 1/2 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1 tbsp sweet or dill pickle relish
  • 1/2 tsp lemon juice
  • 1/2 cup finely diced celery
  • 2 tbsp fresh chives, minced
  • 1/4 tsp smoked paprika
  • 1/4 tsp salt
  • 1/8 tsp black pepper

Instructions:

  1. Place eggs in a single layer in a saucepan and cover with water by one inch. Bring to a rolling boil over high heat.
  2. Remove the pan from heat immediately once boiling, cover with a lid, and let sit for 10-12 minutes.
  3. Transfer eggs to an ice water bath for 5 minutes. Gently crack the shells and peel under cold running water.
  4. In a large mixing bowl, whisk together mayonnaise, Dijon mustard, relish, and lemon juice until smooth.
  5. Roughly chop the hard-boiled eggs into 1/2-inch pieces and fold them into the dressing along with the diced celery and chives.
  6. Season with salt, black pepper, and a dusting of smoked paprika. Mix gently to combine.
