- 2 lbs English cucumbers, thinly sliced
Instructions:
- Slice the English cucumbers into thin, uniform rounds (approximately 1/8 inch) and place them in a large bowl along with the thinly sliced red onions.
- In a separate small bowl, whisk together the apple cider vinegar, granulated sugar, salt, and black pepper until the sugar is completely dissolved.
- Slowly whisk the olive oil and minced garlic into the vinegar mixture until emulsified.
- Pour the dressing over the cucumber and onion mixture, tossing gently to ensure all vegetables are evenly coated.
- Cover the bowl and refrigerate for at least 20 minutes before serving to lock in flavors and ensure a crisp texture.
