Ingredients:

  • 1/2 tsp fine sea salt
  • 1/4 tsp black pepper
  • 1 tbsp extra virgin olive oil
  • 1 clove garlic, minced
  • 2 tbsp fresh dill, chopped
  • 1/4 cup red onion, thinly sliced
  • 2 lbs English cucumbers, thinly sliced

Instructions:

  1. Slice the English cucumbers into thin, uniform rounds (approximately 1/8 inch) and place them in a large bowl along with the thinly sliced red onions.
  2. In a separate small bowl, whisk together the apple cider vinegar, granulated sugar, salt, and black pepper until the sugar is completely dissolved.
  3. Slowly whisk the olive oil and minced garlic into the vinegar mixture until emulsified.
  4. Pour the dressing over the cucumber and onion mixture, tossing gently to ensure all vegetables are evenly coated.
  5. Cover the bowl and refrigerate for at least 20 minutes before serving to lock in flavors and ensure a crisp texture.
