Ingredients:

  • 1 cup (120g) all-purpose flour
  • 1 cup (240ml) water
  • 1/4 cup (57g) unsalted butter, cut into pieces
  • 1/4 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 2 large eggs
  • 1/2 cup (100g) granulated sugar
  • 1 tablespoon ground cinnamon
  • 1/4 cup melted dark chocolate (optional)

Instructions:

  1. Combine water, butter, salt, and cinnamon in a saucepan. Bring to a boil over medium heat, stirring until butter is melted.
  2. Remove from heat and quickly stir in the flour until a smooth dough forms. Let the dough cool slightly for a few minutes.
  3. Transfer the dough to a mixing bowl. Beat in the eggs, one at a time, until fully incorporated. The dough will be smooth and slightly sticky.
  4. Preheat oven to 400°F (200°C, Gas Mark 6). Line a baking sheet with parchment paper.
  5. Transfer the dough to a piping bag fitted with a large star tip (or use a spoon). Pipe bite-sized mounds of dough onto the prepared baking sheet. If spooning, try to create similar sized portions.
  6. Bake for 12-15 minutes, or until golden brown and puffed up.
  7. While the churro bites are baking, combine the sugar and cinnamon in a shallow bowl.
  8. Immediately after removing from the oven, gently toss the hot churro bites in the cinnamon-sugar mixture, ensuring they are evenly coated.
  9. Serve warm, with optional melted chocolate for drizzling.
