Ingredients:

  • 500g cherry tomatoes, halved
  • 15g red onion, finely diced
  • 15g fresh parsley, chopped
  • 15g fresh basil, torn
  • 3 tbsp extra virgin olive oil
  • 1 tbsp red wine vinegar
  • 1 tsp honey
  • 3g garlic, minced
  • 1/2 tsp sea salt
  • 1/4 tsp black pepper

Instructions:

  1. Wash the cherry tomatoes and pat them dry. Slice them in half lengthwise and place them into a large mixing bowl along with the diced red onion.
  2. In a small jar or bowl, combine the olive oil, red wine vinegar, honey, minced garlic, salt, and pepper. Whisk vigorously or shake the jar until the mixture is emulsified, cloudy, and thickened.
  3. Drizzle the dressing over the tomatoes and onions. Gently fold in the fresh parsley and basil using a spoon or spatula until the tomatoes have a reflective sheen, avoiding over-mixing.
