Ingredients:

  • 3 cups (270g) Old Fashioned Rolled Oats
  • 1 tsp (5g) Baking powder
  • 1.5 tsp (4g) Ground cinnamon
  • 0.5 tsp (3g) Sea salt
  • 0.5 cup (50g) Chopped walnuts
  • 2 large (100g) Eggs, room temperature
  • 2.5 cups (600ml) Whole milk
  • 0.33 cup (80ml) Pure maple syrup
  • 0.25 cup (56g) Unsalted butter, melted
  • 2 tsp (8g) Pure vanilla extract
  • 1.5 cups (225g) Fresh blueberries
  • 1 medium (180g) Granny Smith apple, finely diced

Instructions:

  1. Preheat your oven to 375°F (190°C). Grease your baking dish with a little extra butter or non stick spray.
  2. In a large bowl, combine the 3 cups of oats, 1 tsp baking powder, 1.5 tsp cinnamon, 0.5 tsp sea salt, and half of the walnuts.
  3. In a separate bowl, whisk the 2 eggs, 2.5 cups milk, 0.33 cup maple syrup, 2 tsp vanilla, and 0.25 cup melted butter.
  4. Spread the diced Granny Smith apple and half of the blueberries across the bottom of the prepared baking dish.
  5. Pour the dry oat mixture over the fruit in an even layer.
  6. Slowly drizzle the milk mixture over the oats, ensuring every bit of grain is submerged.
  7. Scatter the remaining blueberries and walnuts over the top for a beautiful visual finish.
  8. Place in the center of the oven and bake for 35 minutes until the top is golden and the center is set.
  9. Let it rest for 5 minutes before slicing.
