Ingredients:
- 2 cups (250g) all-purpose flour
- 1 teaspoon (5g) baking soda
- ½ teaspoon (3g) ground cinnamon
- ¼ teaspoon (1.5g) salt
- ½ cup (115g / 1 stick) unsalted butter, softened
- ¾ cup (150g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1 tablespoon (15ml) Banana Liqueur or Extract (Optional)
- 1 cup (240g) mashed ripe bananas (about 3 medium bananas)
- ½ cup (120ml) buttermilk (or sour milk)
- ¼ cup (30g) chopped walnuts or pecans (Optional)
Instructions:
- Preheat oven to 350°F (175°C). Grease and flour a 9x5 inch loaf pan.
- In a medium bowl, whisk together flour, baking soda, cinnamon, and salt.
- In a large bowl, cream together the softened butter and sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract and the optional banana liqueur/extract.
- In a separate bowl, mash the bananas until smooth.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, beginning and ending with the dry ingredients. Mix until just combined.
- Gently fold in the mashed bananas.
- Pour the batter into the prepared loaf pan and sprinkle with chopped nuts (if using).
- Bake for 50-60 minutes, or until a wooden skewer inserted into the centre comes out clean.
- Let the bread cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
