Ingredients:

  • 1 lb shredded chicken breast, cooked
  • 1 cup dill pickles, finely diced
  • 1/2 cup celery, small dice
  • 1/4 cup green onions, thinly sliced
  • 1/3 cup plain Greek yogurt, full-fat
  • 1/4 cup avocado oil mayonnaise
  • 2 tbsp dill pickle brine
  • 2 tbsp fresh dill, minced
  • 1 tsp Dijon mustard
  • 1/2 tsp garlic powder
  • salt and cracked black pepper to taste

Instructions:

  1. In a small bowl, whisk together the Greek yogurt, mayonnaise, pickle brine, Dijon mustard, and garlic powder until the dressing is velvety. Stir in the fresh minced dill.
  2. Place the shredded chicken, diced pickles, celery, and green onions into a large mixing bowl. Toss the ingredients dry to ensure even distribution of the pickles and vegetables.
  3. Pour the prepared dressing over the chicken mixture. Use a silicone spatula to fold the dressing in gently until the chicken is evenly coated and the mixture is cohesive.
