Ingredients:

  • 1 pound (454g) cooked crab meat, picked over for shells (fresh or high-quality canned)
  • 1/4 cup (60ml) mayonnaise, good quality
  • 2 tablespoons (30ml) celery, finely diced
  • 2 tablespoons (30ml) red onion, finely diced
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 tablespoon (15ml) fresh parsley, chopped
  • 1 teaspoon (5ml) Dijon mustard
  • 1/4 teaspoon (1.25ml) Old Bay seasoning (or your favourite seafood spice blend)
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Dice the celery and red onion finely. Chop the parsley.
  2. In a mixing bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, and Old Bay seasoning. Season with salt and pepper.
  3. Gently fold the crab meat, celery, red onion, and parsley into the dressing. Be careful not to over-mix.
  4. Taste the salad and adjust seasonings as needed. Add more lemon juice for tanginess, or more Old Bay for a spicier kick.
  5. Cover and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional, but it enhances the flavour.
  6. Serve chilled, garnished with lemon wedges and dill sprigs (if desired).
