Ingredients:
- 1 pound (454g) cooked crab meat, picked over for shells (fresh or high-quality canned)
- 1/4 cup (60ml) mayonnaise, good quality
- 2 tablespoons (30ml) celery, finely diced
- 2 tablespoons (30ml) red onion, finely diced
- 1 tablespoon (15ml) fresh lemon juice
- 1 tablespoon (15ml) fresh parsley, chopped
- 1 teaspoon (5ml) Dijon mustard
- 1/4 teaspoon (1.25ml) Old Bay seasoning (or your favourite seafood spice blend)
- Salt and freshly ground black pepper to taste
Instructions:
- Dice the celery and red onion finely. Chop the parsley.
- In a mixing bowl, whisk together the mayonnaise, lemon juice, Dijon mustard, and Old Bay seasoning. Season with salt and pepper.
- Gently fold the crab meat, celery, red onion, and parsley into the dressing. Be careful not to over-mix.
- Taste the salad and adjust seasonings as needed. Add more lemon juice for tanginess, or more Old Bay for a spicier kick.
- Cover and refrigerate for at least 30 minutes to allow the flavors to meld. This step is optional, but it enhances the flavour.
- Serve chilled, garnished with lemon wedges and dill sprigs (if desired).
