Ingredients:
- 2 large English cucumbers, sliced into half-moons (approx. 1.5 lbs / 680g)
- 1/2 cup (75g) red onion, very thinly sliced
- 6 oz (170g) feta cheese, crumbled or cubed
- 1/4 cup (15g) fresh parsley, chopped
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) fresh lemon juice
- 1 tsp (5g) dried oregano
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) black pepper
Instructions:
- Slice the English cucumbers into 1/4 inch half-moons and the red onion into translucent slivers. Place both in a large mixing bowl.
- In a small jar or bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, kosher salt, and black pepper until the mixture is emulsified and cloudy.
- Pour the dressing over the cucumbers and onions and toss gently to coat.
- Add the crumbled feta and chopped parsley, folding the cheese in carefully with a spatula to keep the cubes intact.
