Ingredients:

  • 2 large English cucumbers, sliced into half-moons (approx. 1.5 lbs / 680g)
  • 1/2 cup (75g) red onion, very thinly sliced
  • 6 oz (170g) feta cheese, crumbled or cubed
  • 1/4 cup (15g) fresh parsley, chopped
  • 3 tbsp (45ml) extra virgin olive oil
  • 2 tbsp (30ml) fresh lemon juice
  • 1 tsp (5g) dried oregano
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) black pepper

Instructions:

  1. Slice the English cucumbers into 1/4 inch half-moons and the red onion into translucent slivers. Place both in a large mixing bowl.
  2. In a small jar or bowl, whisk together the extra virgin olive oil, fresh lemon juice, dried oregano, kosher salt, and black pepper until the mixture is emulsified and cloudy.
  3. Pour the dressing over the cucumbers and onions and toss gently to coat.
  4. Add the crumbled feta and chopped parsley, folding the cheese in carefully with a spatula to keep the cubes intact.
