Ingredients:
- 2 English cucumbers (about 400g), peeled (optional) and diced
- 2 medium ripe avocados (about 300g), pitted and diced
- 1 pint cherry tomatoes (about 300g), halved or quartered
- 1/2 red onion (about 50g), thinly sliced or finely diced
- 1/4 cup fresh cilantro (coriander) leaves (about 10g), roughly chopped
- 3 tablespoons extra virgin olive oil (45 ml)
- 2 tablespoons fresh lime juice (30 ml)
- 1 teaspoon honey or maple syrup (5 ml)
- 1/2 teaspoon sea salt (3g)
- 1/4 teaspoon black pepper (1g)
- Pinch of red pepper flakes (optional, for a bit of a kick)
Instructions:
- Dice the cucumber, avocado, and red onion. Halve or quarter the cherry tomatoes. Chop the cilantro.
- In a small bowl, whisk together the olive oil, lime juice, honey/maple syrup, salt, pepper, and red pepper flakes (if using). Whisk until emulsified.
- In a large mixing bowl, gently combine the cucumber, avocado, tomatoes, red onion, and cilantro.
- Pour the lime dressing over the salad and gently toss to combine. Be careful not to mash the avocado!
- For the best flavour and texture, serve immediately. Although, a brief chill (15 minutes) in the fridge can enhance the flavours if you have time.
