Ingredients:

  • 2 English cucumbers (about 400g), peeled (optional) and diced
  • 2 medium ripe avocados (about 300g), pitted and diced
  • 1 pint cherry tomatoes (about 300g), halved or quartered
  • 1/2 red onion (about 50g), thinly sliced or finely diced
  • 1/4 cup fresh cilantro (coriander) leaves (about 10g), roughly chopped
  • 3 tablespoons extra virgin olive oil (45 ml)
  • 2 tablespoons fresh lime juice (30 ml)
  • 1 teaspoon honey or maple syrup (5 ml)
  • 1/2 teaspoon sea salt (3g)
  • 1/4 teaspoon black pepper (1g)
  • Pinch of red pepper flakes (optional, for a bit of a kick)

Instructions:

  1. Dice the cucumber, avocado, and red onion. Halve or quarter the cherry tomatoes. Chop the cilantro.
  2. In a small bowl, whisk together the olive oil, lime juice, honey/maple syrup, salt, pepper, and red pepper flakes (if using). Whisk until emulsified.
  3. In a large mixing bowl, gently combine the cucumber, avocado, tomatoes, red onion, and cilantro.
  4. Pour the lime dressing over the salad and gently toss to combine. Be careful not to mash the avocado!
  5. For the best flavour and texture, serve immediately. Although, a brief chill (15 minutes) in the fridge can enhance the flavours if you have time.
