Ingredients:

  • 2 large English cucumbers (about 12 inches long), washed and dried (approx. 600g)
  • 2 ripe avocados, pitted and mashed (approx. 300g)
  • 1/4 cup finely chopped red onion (approx. 35g)
  • 2 tablespoons fresh lime juice (approx. 30ml)
  • 1 tablespoon chopped fresh cilantro (coriander)
  • 1/2 teaspoon chili flakes (or more to taste)
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon black pepper
  • Optional garnish: Microgreens, toasted sesame seeds, extra chili flakes

Instructions:

  1. Slice the cucumbers into 1/4-inch thick rounds. Pat dry with paper towels to remove excess moisture.
  2. In a mixing bowl, mash the avocados until smooth. Add red onion, lime juice, cilantro, chili flakes, salt, and pepper. Mix well.
  3. Spoon or dollop a small amount of the avocado mixture onto each cucumber slice.
  4. Sprinkle with microgreens, toasted sesame seeds, or extra chili flakes for added flavour and visual appeal (optional).
  5. Serve immediately. If making ahead, store avocado mixture separately and assemble just before serving.
