Ingredients:
- 2 large English cucumbers (about 12 inches long), washed and dried (approx. 600g)
- 2 ripe avocados, pitted and mashed (approx. 300g)
- 1/4 cup finely chopped red onion (approx. 35g)
- 2 tablespoons fresh lime juice (approx. 30ml)
- 1 tablespoon chopped fresh cilantro (coriander)
- 1/2 teaspoon chili flakes (or more to taste)
- 1/4 teaspoon sea salt
- 1/4 teaspoon black pepper
- Optional garnish: Microgreens, toasted sesame seeds, extra chili flakes
Instructions:
- Slice the cucumbers into 1/4-inch thick rounds. Pat dry with paper towels to remove excess moisture.
- In a mixing bowl, mash the avocados until smooth. Add red onion, lime juice, cilantro, chili flakes, salt, and pepper. Mix well.
- Spoon or dollop a small amount of the avocado mixture onto each cucumber slice.
- Sprinkle with microgreens, toasted sesame seeds, or extra chili flakes for added flavour and visual appeal (optional).
- Serve immediately. If making ahead, store avocado mixture separately and assemble just before serving.
