Ingredients:
- 2 large English cucumbers, thinly sliced
- 1/2 medium red onion, thinly slivered
- 1 tsp coarse kosher salt
- 1/2 cup apple cider vinegar
- 3 tbsp neutral oil
- 2 tbsp granulated sugar
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- 2 tbsp fresh dill, chopped
Instructions:
- Slice the cucumbers into thin rounds, place them in a colander, and toss with coarse salt. Let them sit for 20–30 minutes to draw out excess moisture.
- Rinse the salted cucumbers quickly with cold water and pat dry thoroughly with a paper towel.
- In a small bowl or jar, combine apple cider vinegar, sugar, neutral oil, garlic powder, and black pepper. Whisk or shake until the sugar is dissolved and the oil is fully integrated.
- Combine the dried cucumbers and slivered red onions in a large bowl.
- Pour the dressing over the vegetables and toss gently with tongs to coat. Fold in the fresh dill last.
