Ingredients:

  • 2 large English cucumbers, thinly sliced
  • 1/2 medium red onion, thinly slivered
  • 1 tsp coarse kosher salt
  • 1/2 cup apple cider vinegar
  • 3 tbsp neutral oil
  • 2 tbsp granulated sugar
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • 2 tbsp fresh dill, chopped

Instructions:

  1. Slice the cucumbers into thin rounds, place them in a colander, and toss with coarse salt. Let them sit for 20–30 minutes to draw out excess moisture.
  2. Rinse the salted cucumbers quickly with cold water and pat dry thoroughly with a paper towel.
  3. In a small bowl or jar, combine apple cider vinegar, sugar, neutral oil, garlic powder, and black pepper. Whisk or shake until the sugar is dissolved and the oil is fully integrated.
  4. Combine the dried cucumbers and slivered red onions in a large bowl.
  5. Pour the dressing over the vegetables and toss gently with tongs to coat. Fold in the fresh dill last.
