  • 1/2 cup finely grated Parmesan cheese (about 50g)
  • 2 tablespoons all-purpose flour (25g)
  • 1 teaspoon garlic powder (5g)
  • 1/2 teaspoon Italian seasoning (2.5g)
  • 1/4 teaspoon black pepper (1g)
  • 2 tablespoons olive oil (30ml)

Instructions:

  1. Slice zucchini thinly and evenly. Toss with salt in a colander and let sit for 30 minutes to drain excess moisture.
  2. Preheat oven to 400°F (200°C). Line baking sheet with parchment paper or silicone mat.
  3. In a bowl, combine Parmesan cheese, flour, garlic powder, Italian seasoning, and pepper.
  4. Pat zucchini slices thoroughly dry with a clean kitchen towel or paper towels.
  5. Drizzle the zucchini with olive oil then toss with the Parmesan mixture, ensuring each slice is evenly coated.
  6. Arrange zucchini slices in a single layer on the prepared baking sheet, making sure they don't overlap.
  7. Bake for 15-20 minutes, or until golden brown and crispy, flipping halfway through. Watch closely to prevent burning.
