Ingredients:
- 1 tablespoon olive oil (15 ml)
- 1 pound Italian sausage, casings removed (450g)
- 1 medium yellow onion, chopped (150g)
- 2 cloves garlic, minced
- 1 teaspoon dried oregano (5 ml)
- ½ teaspoon red pepper flakes (optional, 2.5 ml)
- 1 (28 ounce) can crushed tomatoes (794g)
- 4 cups chicken broth (950 ml)
- 1 cup heavy cream (240 ml)
- ½ cup grated Parmesan cheese, plus more for serving (50g)
- Salt and freshly ground black pepper, to taste
- Fresh basil, chopped, for garnish (optional)
Instructions:
- Heat olive oil in a Dutch oven over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Remove sausage and set aside.
- Add onion to the pot and cook until softened, about 5 minutes. Add garlic, oregano, and red pepper flakes (if using) and cook for another minute until fragrant.
- Pour in crushed tomatoes and chicken broth. Bring to a simmer.
- Return sausage to the pot. Reduce heat to low, cover, and simmer for 15 minutes, allowing the flavors to meld.
- Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
- Garnish with fresh basil (if using) and extra Parmesan cheese. Serve hot and enjoy these amazing one pot soups.
