Ingredients:

  • 1 tablespoon olive oil (15 ml)
  • 1 pound Italian sausage, casings removed (450g)
  • 1 medium yellow onion, chopped (150g)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano (5 ml)
  • ½ teaspoon red pepper flakes (optional, 2.5 ml)
  • 1 (28 ounce) can crushed tomatoes (794g)
  • 4 cups chicken broth (950 ml)
  • 1 cup heavy cream (240 ml)
  • ½ cup grated Parmesan cheese, plus more for serving (50g)
  • Salt and freshly ground black pepper, to taste
  • Fresh basil, chopped, for garnish (optional)

Instructions:

  1. Heat olive oil in a Dutch oven over medium heat. Add sausage and cook, breaking it up with a spoon, until browned. Remove sausage and set aside.
  2. Add onion to the pot and cook until softened, about 5 minutes. Add garlic, oregano, and red pepper flakes (if using) and cook for another minute until fragrant.
  3. Pour in crushed tomatoes and chicken broth. Bring to a simmer.
  4. Return sausage to the pot. Reduce heat to low, cover, and simmer for 15 minutes, allowing the flavors to meld.
  5. Stir in heavy cream and Parmesan cheese. Season with salt and pepper to taste.
  6. Garnish with fresh basil (if using) and extra Parmesan cheese. Serve hot and enjoy these amazing one pot soups.
