Ingredients:

  • 1 tbsp olive oil (15 ml)
  • 1 medium onion, chopped (approximately 1 cup/150g)
  • 2 cloves garlic, minced
  • 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry (283g)
  • 3 large eggs
  • 1 cup sour cream (240 ml)
  • ½ cup milk (120 ml)
  • 1/4 cup all-purpose flour (30g)
  • ½ tsp salt (3g)
  • ¼ tsp black pepper (1g)
  • ¼ tsp ground nutmeg
  • 8 ounces feta cheese, crumbled (225g)
  • ½ cup shredded mozzarella cheese (50g)

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
  2. Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
  3. In a large mixing bowl, combine the sautéed onion and garlic, spinach, eggs, sour cream, milk, flour, salt, pepper, and nutmeg. Mix well.
  4. Gently fold in the crumbled feta cheese.
  5. Pour the spinach mixture into the prepared baking dish.
  6. Sprinkle the shredded mozzarella cheese evenly over the top.
  7. Bake for 35-40 minutes, or until the casserole is golden brown and set. A knife inserted into the center should come out clean.
  8. Let cool for a few minutes before serving.
