Ingredients:
- 1 tbsp olive oil (15 ml)
- 1 medium onion, chopped (approximately 1 cup/150g)
- 2 cloves garlic, minced
- 1 (10 oz) package frozen chopped spinach, thawed and squeezed dry (283g)
- 3 large eggs
- 1 cup sour cream (240 ml)
- ½ cup milk (120 ml)
- 1/4 cup all-purpose flour (30g)
- ½ tsp salt (3g)
- ¼ tsp black pepper (1g)
- ¼ tsp ground nutmeg
- 8 ounces feta cheese, crumbled (225g)
- ½ cup shredded mozzarella cheese (50g)
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x13 inch baking dish.
- Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook for 1 minute more, until fragrant.
- In a large mixing bowl, combine the sautéed onion and garlic, spinach, eggs, sour cream, milk, flour, salt, pepper, and nutmeg. Mix well.
- Gently fold in the crumbled feta cheese.
- Pour the spinach mixture into the prepared baking dish.
- Sprinkle the shredded mozzarella cheese evenly over the top.
- Bake for 35-40 minutes, or until the casserole is golden brown and set. A knife inserted into the center should come out clean.
- Let cool for a few minutes before serving.
