Ingredients:
- 2 large yellow onions, thinly sliced (approx. 1 lb / 450g)
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 1/2 tsp kosher salt
- 1 cup full-fat sour cream
- 1/4 cup mayonnaise
- 1 tsp garlic powder
- 1/2 tsp cracked black pepper
- 1 tsp Worcestershire sauce
- 1 tbsp fresh chives, finely chopped
Instructions:
- Place a skillet over medium heat and add the butter and olive oil. Once the butter is foaming, stir in the sliced onions and salt. Cook for 8–10 minutes, stirring occasionally, until the onions become translucent and soft.
- Reduce heat to medium-low. Continue cooking the onions, stirring every few minutes for about 20 minutes, until they reach a mahogany-colored hue and a jammy consistency. Remove from heat and let them cool completely.
- In a medium mixing bowl, whisk together the sour cream, mayonnaise, garlic powder, black pepper, and Worcestershire sauce until smooth.
- Gently fold in the cooled caramelized onions using a spatula until evenly distributed.
- Garnish with finely chopped fresh chives and chill for at least one hour before serving to allow flavors to stabilize.
