Ingredients:

  • 2 tablespoons (30 ml) olive oil
  • 4 cloves garlic, minced (about 2 tablespoons)
  • 1/4 teaspoon (1.5 g) red pepper flakes (optional)
  • 1 pound (450 g) fresh spinach, thoroughly washed and chopped coarsely
  • 1/2 cup (120 ml) heavy cream
  • 1/4 cup (60 ml) grated Parmesan cheese, plus extra for garnish
  • 1 tablespoon (15 g) unsalted butter
  • Salt and freshly ground black pepper to taste
  • Pinch of nutmeg (optional)

Instructions:

  1. Heat olive oil in a large skillet over medium heat. Add garlic and red pepper flakes (if using) and sauté until fragrant, about 1-2 minutes, being careful not to burn the garlic.
  2. Add the chopped spinach to the skillet. Cook, stirring frequently, until the spinach has wilted completely, about 3-5 minutes.
  3. Stir in heavy cream, Parmesan cheese, butter, nutmeg (if using), salt, and pepper.
  4. Reduce heat to low and simmer, stirring occasionally, until the sauce has thickened slightly, about 2-3 minutes.
  5. Remove from heat and serve immediately, garnished with extra Parmesan cheese if desired.
