Ingredients:

  • 8 oz (225g) full-fat cream cheese, softened
  • 1/4 cup (60ml) sour cream
  • 2 tbsp (30ml) mayonnaise
  • 1 cup (115g) sharp cheddar cheese, freshly grated
  • 4 medium jalapeños, finely diced
  • 2 cloves garlic, minced
  • 4 slices (60g) thick-cut bacon, cooked crispy and crumbled
  • 2 tbsp (10g) green onions, thinly sliced
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) cracked black pepper
  • 1 tsp (5ml) fresh lime juice

Instructions:

  1. Soften the cream cheese. If it's too cold, microwave it for 15 seconds Note: this prevents lumpy dip.
  2. Dice your jalapeños and green onions finely.
  3. Fry the bacon in a pan until mahogany colored and shattering. Drain it on paper towels before crumbling.
  4. In your mixing bowl, beat the cream cheese, sour cream, and mayonnaise until the mixture is smooth and glossy.
  5. Fold in the grated cheddar, diced jalapeños, minced garlic, and half of the crumbled bacon.
  6. Stir in the salt, pepper, and lime juice until evenly distributed.
  7. Transfer the mixture to your 8 inch oven safe skillet.
  8. Bake at 375°F (190°C) for 12–15 minutes until the edges are bubbling and the top is lightly golden.
  9. Top with the remaining crumbled bacon and sliced green onions.
