Ingredients:
- 8 oz (225g) full-fat cream cheese, softened
- 1/4 cup (60ml) sour cream
- 2 tbsp (30ml) mayonnaise
- 1 cup (115g) sharp cheddar cheese, freshly grated
- 4 medium jalapeños, finely diced
- 2 cloves garlic, minced
- 4 slices (60g) thick-cut bacon, cooked crispy and crumbled
- 2 tbsp (10g) green onions, thinly sliced
- 1/2 tsp (3g) kosher salt
- 1/4 tsp (1g) cracked black pepper
- 1 tsp (5ml) fresh lime juice
Instructions:
- Soften the cream cheese. If it's too cold, microwave it for 15 seconds Note: this prevents lumpy dip.
- Dice your jalapeños and green onions finely.
- Fry the bacon in a pan until mahogany colored and shattering. Drain it on paper towels before crumbling.
- In your mixing bowl, beat the cream cheese, sour cream, and mayonnaise until the mixture is smooth and glossy.
- Fold in the grated cheddar, diced jalapeños, minced garlic, and half of the crumbled bacon.
- Stir in the salt, pepper, and lime juice until evenly distributed.
- Transfer the mixture to your 8 inch oven safe skillet.
- Bake at 375°F (190°C) for 12–15 minutes until the edges are bubbling and the top is lightly golden.
- Top with the remaining crumbled bacon and sliced green onions.
