Ingredients:

  • 8 oz cream cheese, softened
  • 1/2 cup Greek yogurt
  • 15 oz refried beans
  • 1/2 cup chunky salsa
  • 1 tbsp taco seasoning
  • 1 tsp lime juice
  • 1 cup shredded Monterey Jack cheese
  • 2 tbsp chopped fresh cilantro
  • 1 stalk sliced green onion

Instructions:

  1. Whip the softened cream cheese and Greek yogurt together in a medium bowl using a rubber spatula or hand mixer until the mixture is smooth and no lumps remain.
  2. Fold in the refried beans, taco seasoning, and lime juice.
  3. Stir in the chunky salsa, ensuring the bean mixture is evenly distributed until the batter holds a thick, velvety consistency.
  4. Spread the mixture evenly into an 8x8 inch baking dish and top with the shredded Monterey Jack cheese in an even layer.
  5. Bake at 350°F (175°C) for 20-25 minutes, or until the cheese is bubbling and the edges are just starting to turn golden brown.
  6. Remove from the oven and let stand for 5 minutes to set. Garnish with chopped cilantro and sliced green onions.
