- 1/2 cup Greek yogurt
- 15 oz refried beans
- 1/2 cup chunky salsa
- 1 tbsp taco seasoning
- 1 tsp lime juice
- 1 cup shredded Monterey Jack cheese
- 2 tbsp chopped fresh cilantro
- 1 stalk sliced green onion
Instructions:
- Whip the softened cream cheese and Greek yogurt together in a medium bowl using a rubber spatula or hand mixer until the mixture is smooth and no lumps remain.
- Fold in the refried beans, taco seasoning, and lime juice.
- Stir in the chunky salsa, ensuring the bean mixture is evenly distributed until the batter holds a thick, velvety consistency.
- Spread the mixture evenly into an 8x8 inch baking dish and top with the shredded Monterey Jack cheese in an even layer.
- Bake at 350°F (175°C) for 20-25 minutes, or until the cheese is bubbling and the edges are just starting to turn golden brown.
- Remove from the oven and let stand for 5 minutes to set. Garnish with chopped cilantro and sliced green onions.
