Ingredients:

  • 250g all-purpose flour
  • 200g granulated sugar
  • 1.5 tsp baking powder
  • 0.5 tsp baking soda
  • 1 tsp sea salt
  • 1 large egg, room temperature
  • 180ml fresh orange juice
  • 1 tbsp orange zest
  • 60ml neutral oil
  • 1 tsp vanilla extract
  • 150g fresh or frozen cranberries
  • 100g chopped walnuts

Instructions:

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan thoroughly with butter or non stick spray.
  2. Whisk 250g all purpose flour, 200g sugar, 1.5 tsp baking powder, 0.5 tsp baking soda, and 1 tsp sea salt in a large bowl until the mixture looks like fine sand.
  3. Add 1 tbsp orange zest to the dry mix and rub it between your fingers until the sugar smells intensely like citrus.
  4. In a separate bowl, beat 1 large egg with 180ml orange juice, 60ml oil, and 1 tsp vanilla until the color is pale and uniform.
  5. Pour the wet mixture into the dry ingredients. Stir gently with a spatula until no streaks of dry flour remain.
  6. Gently turn in 150g cranberries and 100g chopped walnuts until they are evenly distributed through the dough texture.
  7. Pour into your prepared pan and smooth the top with your spatula.
  8. Bake the loaf. Slide it into the oven for 55 minutes until a toothpick comes out clean and the top has a deep golden crackle.
  9. Let it sit in the pan for 10 minutes until the edges pull away slightly from the metal, then move to a wire rack.
