Ingredients:
- 250g all-purpose flour
- 200g granulated sugar
- 1.5 tsp baking powder
- 0.5 tsp baking soda
- 1 tsp sea salt
- 1 large egg, room temperature
- 180ml fresh orange juice
- 1 tbsp orange zest
- 60ml neutral oil
- 1 tsp vanilla extract
- 150g fresh or frozen cranberries
- 100g chopped walnuts
Instructions:
- Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan thoroughly with butter or non stick spray.
- Whisk 250g all purpose flour, 200g sugar, 1.5 tsp baking powder, 0.5 tsp baking soda, and 1 tsp sea salt in a large bowl until the mixture looks like fine sand.
- Add 1 tbsp orange zest to the dry mix and rub it between your fingers until the sugar smells intensely like citrus.
- In a separate bowl, beat 1 large egg with 180ml orange juice, 60ml oil, and 1 tsp vanilla until the color is pale and uniform.
- Pour the wet mixture into the dry ingredients. Stir gently with a spatula until no streaks of dry flour remain.
- Gently turn in 150g cranberries and 100g chopped walnuts until they are evenly distributed through the dough texture.
- Pour into your prepared pan and smooth the top with your spatula.
- Bake the loaf. Slide it into the oven for 55 minutes until a toothpick comes out clean and the top has a deep golden crackle.
- Let it sit in the pan for 10 minutes until the edges pull away slightly from the metal, then move to a wire rack.
