Ingredients:
- 2 ½ cups (300g) all-purpose flour, plus more for dusting
- 1 tablespoon (12g) baking powder
- ½ teaspoon (3g) baking soda
- 1 teaspoon (6g) salt
- 2 tablespoons (25g) granulated sugar
- ½ cup (1 stick/113g) unsalted butter, very cold, cut into cubes
- 1 cup (240ml) buttermilk, very cold
Instructions:
- Preheat oven to 450°F (232°C). Prepare a baking sheet.
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
- Cut the cold butter into the dry ingredients using a pastry cutter or by pulsing in a food processor until the mixture resembles coarse crumbs.
- Gently pour in the cold buttermilk. Stir until just combined. The dough will be shaggy and slightly sticky. Do not overmix.
- Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle. Fold the dough in thirds, like a letter. Repeat this folding process 3-4 times.
- Gently roll the dough out to about ½-inch thickness.
- Use a biscuit cutter or sharp knife to cut out biscuits. Press straight down; avoid twisting.
- Place biscuits on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown on top.
- Let the biscuits cool slightly on the baking sheet before serving.
