Ingredients:

  • 2 ½ cups (300g) all-purpose flour, plus more for dusting
  • 1 tablespoon (12g) baking powder
  • ½ teaspoon (3g) baking soda
  • 1 teaspoon (6g) salt
  • 2 tablespoons (25g) granulated sugar
  • ½ cup (1 stick/113g) unsalted butter, very cold, cut into cubes
  • 1 cup (240ml) buttermilk, very cold

Instructions:

  1. Preheat oven to 450°F (232°C). Prepare a baking sheet.
  2. In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
  3. Cut the cold butter into the dry ingredients using a pastry cutter or by pulsing in a food processor until the mixture resembles coarse crumbs.
  4. Gently pour in the cold buttermilk. Stir until just combined. The dough will be shaggy and slightly sticky. Do not overmix.
  5. Turn the dough out onto a lightly floured surface. Gently pat the dough into a rectangle. Fold the dough in thirds, like a letter. Repeat this folding process 3-4 times.
  6. Gently roll the dough out to about ½-inch thickness.
  7. Use a biscuit cutter or sharp knife to cut out biscuits. Press straight down; avoid twisting.
  8. Place biscuits on the prepared baking sheet. Bake for 15-20 minutes, or until golden brown on top.
  9. Let the biscuits cool slightly on the baking sheet before serving.
