Ingredients:
- 3-4 lbs bone-in, skin-on chicken pieces (thighs, drumsticks, or a combination)
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tsp dried thyme
- 1/2 tsp dried sage
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- 1 large yellow onion, chopped (approx. 1 cup)
- 2 celery stalks, chopped (approx. 1 cup)
- 2 carrots, peeled and chopped (approx. 1 cup)
- 2 cloves garlic, minced
- 1 (6 oz/170g) box stuffing mix
- 1 ½ cups chicken broth
- 1/4 cup melted unsalted butter
Instructions:
- Pat chicken pieces dry with paper towels. In a small bowl, combine salt, pepper, thyme, sage, garlic powder, and onion powder. Rub the seasoning mixture evenly over the chicken pieces.
- Heat olive oil in a large skillet over medium-high heat. Sear chicken on all sides until lightly browned (about 2-3 minutes per side). This step enhances flavor and appearance, but can be skipped for simplicity.
- Place chopped onion, celery, and carrots in the bottom of the slow cooker. Top with minced garlic.
- Arrange the browned (or un-browned) chicken pieces on top of the vegetables.
- In a medium bowl, combine stuffing mix, chicken broth, and melted butter. Stir well to combine.
- Spoon the prepared stuffing evenly over the chicken.
- Cover the slow cooker and cook on low for 6-8 hours or on high for 3-4 hours. Chicken is done when the internal temperature reaches 165°F (74°C).
- Carefully remove chicken and stuffing from the slow cooker. Serve immediately.
