Ingredients:

  • 1 cup cherry tomatoes, whole
  • 1 cup English cucumber, sliced into thick rounds
  • 1 cup multicolored bell peppers, cut into 1-inch chunks
  • 1 cup yellow squash, sliced into thick half-moons
  • 1/2 cup feta cheese, cubed
  • 1/2 cup marinated mozzarella pearls
  • 3 tbsp extra virgin olive oil
  • 2 tbsp balsamic vinegar
  • 1 tbsp fresh parsley, finely minced
  • 1 clove garlic, minced
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper

Instructions:

  1. Wash all vegetables thoroughly. Cut the cucumber, peppers, and squash into uniform, bite-sized pieces and pat them dry with a paper towel.
  2. In a medium bowl, whisk together the olive oil, vinegar, minced garlic, and parsley until emulsified. Stir in the salt and pepper.
  3. Thread the ingredients onto 8-inch soaked wooden skewers in a repeating pattern: tomato, cucumber, feta, pepper, squash, and mozzarella.
  4. Lightly drizzle the vinaigrette over the assembled skewers or serve on the side. Refrigerate for 30 minutes before serving.
