Ingredients:

  • 3 large Honeycrisp or Granny Smith apples
  • 1 tbsp lemon juice
  • 2 tbsp granulated white sugar
  • 1.5 tsp ground Saigon cinnamon
  • 1/8 tsp salt

Instructions:

  1. Wash the fruit and slice into 1.5mm rounds. Note: Using a mandoline ensures every slice is identical for even drying.
  2. Toss the slices gently in the 1 tbsp lemon juice. Note: This prevents browning while you prep the coating.
  3. Whisk the 2 tbsp sugar, 1.5 tsp cinnamon, and 1/8 tsp salt in a small bowl.
  4. Dredge each slice through the cinnamon mixture. until lightly and evenly coated on both sides.
  5. Place slices in a single layer on parchment paper. without any edges overlapping.
  6. Bake at 100°C for 1 hours. until the edges start to curl.
  7. Turn each slice over carefully with a thin spatula.
  8. Bake for another 1 hours until the centers feel dry to the touch.
  9. Turn the oven off and let them sit inside for 15 minutes. until they become brittle and snap easily.
