Ingredients:

  • 1 cup (240 ml) warm milk (105-115°F / 40-46°C)
  • 2 ¼ teaspoons (7g) active dry yeast (one packet)
  • ¼ cup (50g) granulated sugar
  • 1 teaspoon salt
  • ¼ cup (57g) unsalted butter, melted
  • 2 large eggs
  • 3 ¼ cups (406g) all-purpose flour, plus more for dusting
  • ¼ cup (57g) unsalted butter, softened
  • ½ cup (100g) packed brown sugar
  • 2 tablespoons ground cinnamon
  • 4 large eggs
  • ½ cup (120 ml) whole milk
  • ¼ cup (60 ml) heavy cream
  • 2 tablespoons granulated sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt
  • 4 ounces (113g) cream cheese, softened
  • ½ cup (57g) powdered sugar, sifted
  • 2-3 tablespoons milk
  • ½ teaspoon vanilla extract
  • 2 tablespoons unsalted butter, for cooking

Instructions:

  1. Prepare the Dough: Bloom the yeast in warm milk. Add sugar, salt, melted butter, and eggs. Gradually add flour and knead until a smooth, elastic dough forms.
  2. First Rise: Place dough in a greased bowl, cover, and let rise in a warm place until doubled in size (about 1-1.5 hours).
  3. Make the Filling: While the dough rises, prepare the cinnamon-sugar filling by creaming together softened butter, brown sugar, and cinnamon.
  4. Assemble the Cinnamon Roll Dough: Roll out the risen dough into a large rectangle. Spread with the cinnamon-sugar filling. Roll up tightly into a log.
  5. Cut into Bites: Slice the log into approximately 1-inch thick rolls.
  6. Second Rise: Arrange rolls in a greased 9x13 inch baking dish, cover, and let rise for another 30 minutes.
  7. Prepare the Custard: Whisk together eggs, milk, cream, sugar, vanilla extract, and salt in a shallow dish.
  8. Soak the Bites: Dip each cinnamon roll bite into the custard mixture, ensuring it's well-soaked but not overly saturated.
  9. Cook the Bites: Melt butter in a large skillet or griddle over medium heat. Cook the soaked bites in batches until golden brown on all sides and cooked through.
  10. Make the Glaze: In a bowl, beat together the softened cream cheese, powdered sugar, milk, and vanilla extract until smooth and creamy.
  11. Assemble and Serve: Drizzle the warm French toast bites with the cream cheese glaze. Serve immediately.
