Ingredients:
- 1.5 cups (190g) all-purpose flour
- 0.5 cup (45g) unsweetened cocoa powder
- 1 tsp (5g) baking soda
- 0.5 tsp (3g) salt
- 1 cup (200g) granulated sugar
- 0.5 cup (115g) vegetable oil
- 2 large eggs (100g)
- 1 tsp (5ml) vanilla extract
- 1.5 cups (225g) grated zucchini, squeezed lightly to remove excess water
- 1 cup (170g) semi-sweet chocolate chips
Instructions:
- Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
- Grate the zucchini using the fine side of the grater to ensure small, uniform shreds.
- In a large mixing bowl, whisk together the sugar, oil, eggs, and vanilla until the mixture is smooth and pale.
- Sift in the flour, cocoa powder, baking soda, and salt. Stir gently with a spatula just until no streaks of flour remain.
- Fold in the grated zucchini and semi-sweet chocolate chips until evenly distributed.
- Pour the batter into the prepared pan, smoothing the top.
- Bake for 60-70 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the top springs back.
- Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
