Ingredients:

  • 1.5 cups (190g) all-purpose flour
  • 0.5 cup (45g) unsweetened cocoa powder
  • 1 tsp (5g) baking soda
  • 0.5 tsp (3g) salt
  • 1 cup (200g) granulated sugar
  • 0.5 cup (115g) vegetable oil
  • 2 large eggs (100g)
  • 1 tsp (5ml) vanilla extract
  • 1.5 cups (225g) grated zucchini, squeezed lightly to remove excess water
  • 1 cup (170g) semi-sweet chocolate chips

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan or line it with parchment paper.
  2. Grate the zucchini using the fine side of the grater to ensure small, uniform shreds.
  3. In a large mixing bowl, whisk together the sugar, oil, eggs, and vanilla until the mixture is smooth and pale.
  4. Sift in the flour, cocoa powder, baking soda, and salt. Stir gently with a spatula just until no streaks of flour remain.
  5. Fold in the grated zucchini and semi-sweet chocolate chips until evenly distributed.
  6. Pour the batter into the prepared pan, smoothing the top.
  7. Bake for 60-70 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs and the top springs back.
  8. Let the bread cool in the pan for 10 minutes before transferring to a wire rack.
