Ingredients:

  • 3 cups cold heavy whipping cream
  • 1/4 cup powdered sugar
  • 2 tsp vanilla extract
  • 1 pinch salt
  • 9 oz chocolate wafers
  • 1 oz 70% dark chocolate, for shaving

Instructions:

  1. Chill a large mixing bowl. Combine the cold heavy cream, powdered sugar, vanilla extract, and a pinch of salt.
  2. Beat the mixture with a stand mixer or hand mixer on low to start, then increase to medium-high speed until firm, stiff peaks form. Do not over-mix.
  3. Spread a thin line of the whipped cream down the center of a long rectangular serving platter to act as 'glue' for the cookies.
  4. Apply a tablespoon of whipped cream to a chocolate wafer, then press another wafer against it. Continue stacking and stand the wafers on their edges along the cream line on the platter to form a long log.
  5. Frost the entire exterior of the cookie log with the remaining whipped cream using an offset spatula.
  6. Grate the dark chocolate over the top for garnish. Cover loosely with plastic wrap and refrigerate for 24 hours to allow the wafers to soften into a cake texture.
