Ingredients:
- 2 cups (300g) cooked chicken breast, diced into ½-inch cubes
- 1/3 cup (80g) plain Greek yogurt
- 2 tbsp (30g) mayonnaise
- 1 tbsp (15ml) fresh lemon juice
- ½ tsp (2.5g) salt
- ¼ tsp (1.2g) black pepper
- ½ cup (75g) red grapes, halved
- ¼ cup (35g) celery, finely diced
- 2 tbsp (10g) red onion, minced
- 1 tbsp (15g) fresh parsley, chopped
- 4 large (10-inch) flour tortillas
- 4 large Romaine lettuce leaves, patted dry
Instructions:
- In a large bowl, whisk together the Greek yogurt, mayonnaise, lemon juice, salt, and pepper until the mixture is velvety and smooth.
- Gently fold in the diced chicken, halved grapes, celery, and red onion until evenly coated. Stir in the fresh parsley last.
- Lay four tortillas flat and place one dry Romaine lettuce leaf in the center of each to create a moisture barrier.
- Scoop approximately ½ cup of chicken salad onto the center of each lettuce leaf. Fold in the sides of the tortilla first, then roll tightly from the bottom up.
