Ingredients:

  • 2 pints (600g) cherry tomatoes, halved
  • 1/2 cup (15g) fresh basil leaves, torn
  • 8 oz (225g) fresh mozzarella pearls
  • 1/2 tsp (3g) flaky sea salt
  • 1/4 cup (60ml) extra virgin olive oil
  • 2 tbsp (30ml) balsamic vinegar
  • 1 tsp (5ml) honey
  • 1 small clove (3g) garlic, minced
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Halve the cherry tomatoes lengthwise. Drain the mozzarella pearls well. Place the tomatoes and mozzarella in a large mixing bowl.
  2. In a small jar or bowl, combine the olive oil, balsamic vinegar, honey, minced garlic, and black pepper. Whisk vigorously or shake the jar for 30 seconds until the mixture is emulsified, thick and opaque.
  3. Pour the dressing over the tomatoes and mozzarella. Gently fold in the torn basil leaves using a spoon or your hands.
  4. Sprinkle with flaky sea salt immediately before serving to maintain the structure of the tomatoes.
