Ingredients:
- 1 cup (120g) all-purpose flour
- 1 teaspoon (5g) baking powder
- ½ teaspoon (2.5g) salt
- ¼ teaspoon (1.25g) black pepper
- 1 large egg, lightly beaten
- ¾ cup (180ml) milk
- 2 tablespoons (30ml) vegetable oil, plus more for frying
- 1 ½ cups (270g) frozen corn kernels, thawed or fresh kernels removed from 2 ears of corn
- ½ cup (50g) shredded cheddar cheese
- ¼ cup (25g) grated Parmesan cheese
- 2 tablespoons finely chopped fresh chives or green onions
Instructions:
- In a large bowl, whisk together flour, baking powder, salt, and pepper.
- In a separate bowl, whisk together egg, milk, and 2 tablespoons of vegetable oil.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Don't overmix.
- Gently fold in the corn, cheddar cheese, Parmesan cheese, and chives/green onions.
- Heat approximately ½ inch of vegetable oil in a large skillet over medium heat. The oil is ready when a small piece of batter sizzles gently when dropped in.
- Drop spoonfuls of batter into the hot oil, being careful not to overcrowd the pan.
- Fry for 2-3 minutes per side, until golden brown and cooked through.
- Remove the fritters with a slotted spoon and place them on a paper towel-lined plate to drain excess oil. Serve immediately. Enjoy these Cheesy Corn Fritters!
