Ingredients:
- 1 ½ cups (150g) graham cracker crumbs
- 5 tablespoons (70g) unsalted butter, melted
- 3 tablespoons (36g) granulated sugar
- 14 ounces (400g) soft caramels, unwrapped
- ¼ cup (60ml) heavy cream
- ¼ teaspoon sea salt
- 2 medium apples (such as Honeycrisp or Granny Smith), peeled, cored, and diced
- 1 tablespoon (12g) unsalted butter
- 2 tablespoons (25g) granulated sugar
- ½ teaspoon ground cinnamon
- ¼ teaspoon ground nutmeg
- 1 tablespoon (15ml) lemon juice
Instructions:
- Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press evenly into the bottom of each serving cup. Chill in the refrigerator.
- Combine caramels, heavy cream, and salt in a saucepan over low heat. Stir constantly until melted and smooth. Remove from heat.
- Melt butter in a skillet over medium heat. Add diced apples, sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until apples are slightly softened and caramelized, about 5-7 minutes. Stir in lemon juice. Remove from heat and let cool slightly.
- Pour a layer of caramel filling over the graham cracker crust in each cup.
- Spoon the spiced apple mixture over the caramel layer.
- Refrigerate for at least 1 hour to allow the caramel to set.
