Ingredients:

  • 1 ½ cups (150g) graham cracker crumbs
  • 5 tablespoons (70g) unsalted butter, melted
  • 3 tablespoons (36g) granulated sugar
  • 14 ounces (400g) soft caramels, unwrapped
  • ¼ cup (60ml) heavy cream
  • ¼ teaspoon sea salt
  • 2 medium apples (such as Honeycrisp or Granny Smith), peeled, cored, and diced
  • 1 tablespoon (12g) unsalted butter
  • 2 tablespoons (25g) granulated sugar
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon ground nutmeg
  • 1 tablespoon (15ml) lemon juice

Instructions:

  1. Combine graham cracker crumbs, melted butter, and sugar in a bowl. Press evenly into the bottom of each serving cup. Chill in the refrigerator.
  2. Combine caramels, heavy cream, and salt in a saucepan over low heat. Stir constantly until melted and smooth. Remove from heat.
  3. Melt butter in a skillet over medium heat. Add diced apples, sugar, cinnamon, and nutmeg. Cook, stirring occasionally, until apples are slightly softened and caramelized, about 5-7 minutes. Stir in lemon juice. Remove from heat and let cool slightly.
  4. Pour a layer of caramel filling over the graham cracker crust in each cup.
  5. Spoon the spiced apple mixture over the caramel layer.
  6. Refrigerate for at least 1 hour to allow the caramel to set.
