Ingredients:

  • 2 medium tomatillos (approx. 150g), husked and rinsed
  • 1 large bunch fresh cilantro (approx. 60g), stems removed
  • 1 medium jalapeño, seeds removed
  • 2 cloves garlic, peeled
  • 1 cup mayonnaise (220g)
  • 1 cup sour cream (230g)
  • 2 tbsp fresh lime juice (30ml)
  • 1 oz ranch seasoning mix (28g)

Instructions:

  1. Place the quartered tomatillos, garlic, lime juice, and jalapeño into the blender. Pulse until the tomatillos have released their liquid and the mixture is a coarse puree.
  2. Add the fresh cilantro to the blender. Process on high for 30–45 seconds until the mixture is a vibrant, uniform green.
  3. Add the mayonnaise, sour cream, and ranch seasoning packet. Blend on medium-low speed until completely smooth and emulsified.
  4. Transfer to an airtight glass jar and refrigerate for at least 30 minutes to allow the flavors to bloom and the pectin to set.
