Ingredients:
- 1/2 cup (113g) unsalted butter, softened
- 1/4 cup (50g) granulated sugar
- 1/4 cup (55g) packed light brown sugar
- 1 large egg
- 1 teaspoon (5ml) vanilla extract
- 1 1/4 cups (150g) all-purpose flour
- 1/2 teaspoon (2.5ml) baking soda
- 1/4 teaspoon (1.25ml) salt
- 1/2 cup (85g) semi-sweet chocolate chips
- 4 ounces (113g) unsweetened chocolate, chopped
- 1/2 cup (113g) unsalted butter
- 1 cup (200g) granulated sugar
- 2 large eggs
- 1 teaspoon (5ml) vanilla extract
- 1/2 cup (60g) all-purpose flour
- 1/4 teaspoon (1.25ml) salt
Instructions:
- Make the Cookie Dough: Cream together butter and sugars. Beat in egg and vanilla. Gradually add dry ingredients, then stir in chocolate chips.
- Chill the Dough: Cover dough and chill in the refrigerator for at least 30 minutes. This prevents excessive spreading during baking.
- Make the Brownie Batter: Melt chocolate and butter. Stir in sugar, then eggs and vanilla. Gently fold in flour and salt.
- Assemble the Bites: Press a small amount of cookie dough into the bottom of each mini muffin cup.
- Fill the Bites: Spoon brownie batter over the cookie dough in each cup, filling almost to the top.
- Bake: Bake at 350°F (175°C) for 18-22 minutes, or until a toothpick inserted into the brownie filling comes out with moist crumbs. Don't overbake!
- Cool: Let cool completely in the muffin tin before removing.
