Ingredients:
- 1/2 cup (113g) unsalted butter
- 3/4 cup (150g) brown sugar, packed
- 1/4 cup (50g) granulated sugar
- 1/2 cup (115g) overripe banana, mashed
- 1 large egg yolk
- 2 tsp vanilla extract
- 2 1/4 cups (280g) all-purpose flour
- 1 tsp cornstarch
- 1 tsp baking soda
- 1/2 tsp ground cinnamon
- 1/2 tsp kosher salt
- 1 cup (170g) semi-sweet chocolate chips
- 1 tsp flaky sea salt
Instructions:
- Place butter in a medium saucepan over medium heat. Whisk constantly until the foam subsides and amber-colored bits appear at the bottom. Immediately transfer to a large mixing bowl to cool slightly.
- Whisk the brown sugar and granulated sugar into the warm browned butter. Add the mashed banana, egg yolk, and vanilla extract. Whisk vigorously for 1 minute until the mixture appears glossy.
- Sift the all-purpose flour, cornstarch, baking soda, cinnamon, and salt into the wet mixture. Fold with a spatula until just a few streaks of flour remain.
- Fold in the semi-sweet chocolate chips. Do not overmix.
- Using a 2-tablespoon cookie scoop, portion the dough onto parchment-lined baking sheets. Bake at 350°F (175°C) for 10 minutes or until edges are golden brown. Finish with a sprinkle of flaky sea salt.
