Ingredients:

  • 1/2 cup (113g) unsalted butter
  • 3/4 cup (150g) brown sugar, packed
  • 1/4 cup (50g) granulated sugar
  • 1/2 cup (115g) overripe banana, mashed
  • 1 large egg yolk
  • 2 tsp vanilla extract
  • 2 1/4 cups (280g) all-purpose flour
  • 1 tsp cornstarch
  • 1 tsp baking soda
  • 1/2 tsp ground cinnamon
  • 1/2 tsp kosher salt
  • 1 cup (170g) semi-sweet chocolate chips
  • 1 tsp flaky sea salt

Instructions:

  1. Place butter in a medium saucepan over medium heat. Whisk constantly until the foam subsides and amber-colored bits appear at the bottom. Immediately transfer to a large mixing bowl to cool slightly.
  2. Whisk the brown sugar and granulated sugar into the warm browned butter. Add the mashed banana, egg yolk, and vanilla extract. Whisk vigorously for 1 minute until the mixture appears glossy.
  3. Sift the all-purpose flour, cornstarch, baking soda, cinnamon, and salt into the wet mixture. Fold with a spatula until just a few streaks of flour remain.
  4. Fold in the semi-sweet chocolate chips. Do not overmix.
  5. Using a 2-tablespoon cookie scoop, portion the dough onto parchment-lined baking sheets. Bake at 350°F (175°C) for 10 minutes or until edges are golden brown. Finish with a sprinkle of flaky sea salt.
