Ingredients:
- 1.5 lbs boneless, skinless chicken breasts
- 2 tbsp extra virgin olive oil
- 1 tsp kosher salt
- 1/2 tsp cracked black pepper
- 1 tsp dried oregano
- 1/2 tsp smoked paprika
- 6 cloves fresh garlic, smashed
- 1/2 large yellow onion, sliced into thick rings
- 3 sprigs fresh rosemary
- 4 sprigs fresh thyme
- 1/2 cup low-sodium chicken bone broth
Instructions:
- Remove the chicken from the packaging and use paper towels to pat every surface completely dry to ensure the spice rub adheres properly.
- In a small bowl, combine the salt, pepper, oregano, and smoked paprika. Massage this mixture into the chicken breasts until they are evenly coated to create a moisture-locking barrier.
- Place the thick onion rings and smashed garlic cloves at the bottom of the 6-quart slow cooker to act as a 'flavor rack'.
- Lay the seasoned chicken breasts on top of the onions. Carefully pour the chicken broth around the sides of the chicken, ensuring you do not wash off the rub.
- Top with fresh rosemary and thyme sprigs. Cover and cook on LOW for approximately 2 to 2.5 hours, or until the internal temperature reaches 74°C (165°F).
