Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 tbsp extra virgin olive oil
  • 1 tsp kosher salt
  • 1/2 tsp cracked black pepper
  • 1 tsp dried oregano
  • 1/2 tsp smoked paprika
  • 6 cloves fresh garlic, smashed
  • 1/2 large yellow onion, sliced into thick rings
  • 3 sprigs fresh rosemary
  • 4 sprigs fresh thyme
  • 1/2 cup low-sodium chicken bone broth

Instructions:

  1. Remove the chicken from the packaging and use paper towels to pat every surface completely dry to ensure the spice rub adheres properly.
  2. In a small bowl, combine the salt, pepper, oregano, and smoked paprika. Massage this mixture into the chicken breasts until they are evenly coated to create a moisture-locking barrier.
  3. Place the thick onion rings and smashed garlic cloves at the bottom of the 6-quart slow cooker to act as a 'flavor rack'.
  4. Lay the seasoned chicken breasts on top of the onions. Carefully pour the chicken broth around the sides of the chicken, ensuring you do not wash off the rub.
  5. Top with fresh rosemary and thyme sprigs. Cover and cook on LOW for approximately 2 to 2.5 hours, or until the internal temperature reaches 74°C (165°F).
