Ingredients:

- 3 tablespoons (35g) granulated sugar
- 1/4 teaspoon baking powder
- 1/8 teaspoon salt
- 3 tablespoons (45ml) milk (dairy or non-dairy)
- 1 tablespoon (15ml) vegetable oil
- 1/4 teaspoon vanilla extract
- 2 tablespoons (30g) fresh or frozen blueberries
Instructions:
- In the mug, whisk together flour, sugar, baking powder, and salt.
- Add milk, oil, and vanilla extract to the mug.
- Mix until just combined. Be careful not to overmix.
- Gently fold in the blueberries.
- Microwave on high for 60-90 seconds, or until the cake is cooked through. Check for doneness by inserting a toothpick into the center; it should come out clean.
- Let the mug cake cool for a minute or two before enjoying.
