Ingredients:
- 225g light cream cheese, softened
- 120g plain Greek yogurt
- 60ml mayonnaise
- 50g grated Parmesan cheese
- 280g frozen spinach, thawed and squeezed dry
- 400g marinated artichoke hearts, drained and chopped
- 115g shredded mozzarella cheese
- 15g garlic, minced
- 5ml lemon juice
- 3g red pepper flakes
- 3g salt
- 1g black pepper
Instructions:
- Thaw the frozen spinach completely. Place it in a fine-mesh strainer or wrap it in a kitchen towel and squeeze firmly until no more liquid escapes.
- In a large bowl, stir together the softened cream cheese, Greek yogurt, and mayonnaise until the mixture is smooth.
- Fold in the minced garlic, lemon juice, and red pepper flakes. Then, gently stir in the squeezed spinach and chopped artichokes. Fold in half of the mozzarella and all of the Parmesan.
- Transfer the mixture into the baking dish and smooth the top. Sprinkle the remaining mozzarella over the top.
- Bake at 375°F (190°C) for 15–20 minutes, then turn the broiler on for 2–3 minutes until the cheese is bubbling and golden.
