Ingredients:
- 1 tbsp olive oil (15 ml)
- 1 large onion, finely chopped (approx. 200g)
- 2 cloves garlic, minced (approx. 6g)
- 1 lb ground beef (beef mince) – (approximately 450g)
- 1 packet taco seasoning (approx. 30g)
- 1 (14.5 oz) can diced tomatoes, undrained (approx. 400g)
- 1 (15 oz) can black beans, rinsed and drained (approx. 425g)
- 1/2 cup beef broth or water (120 ml)
- 1 cup long-grain white rice, rinsed (approx. 200g)
- 2 cups water (480 ml)
- 1/2 tsp salt (3g)
- 1/4 cup lime juice, freshly squeezed (60 ml)
- 2 tbsp olive oil (30 ml)
- 1 tbsp chopped cilantro (15ml)
- 1/2 tsp honey or agave nectar (3g)
- Salt and black pepper to taste
- Shredded cheddar cheese
- Diced avocado
- Sour cream or Greek yogurt
- Chopped cilantro
- Diced tomatoes
- Sliced jalapenos (optional)
- Corn kernels
Instructions:
- Cook the Rice: Combine rice, water, and salt in a saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 18 minutes, or until water is absorbed and rice is fluffy. Fluff with a fork.
- Sauté Aromatics: Heat olive oil in a large skillet over medium heat. Add onion and cook until softened, about 5 minutes. Add garlic and cook until fragrant, about 1 minute.
- Brown the Beef: Add ground beef to the skillet and break it up with a spoon. Cook until browned, draining off any excess grease.
- Season & Simmer: Stir in taco seasoning, diced tomatoes, black beans, and beef broth (or water). Bring to a simmer, then reduce heat and cook for 10 minutes, stirring occasionally, to allow flavors to meld.
- Prepare the Dressing: In a small bowl, whisk together lime juice, olive oil, cilantro, honey (or agave), salt, and pepper.
- Assemble the Bowls: Divide rice among bowls. Top with beef and bean mixture. Add your favorite toppings and drizzle with lime dressing. Serve immediately.
