Ingredients:

  • 2 tablespoons olive oil
  • 1 medium yellow onion, chopped
  • 1 red bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon chili powder
  • 2 cups cooked, shredded chicken
  • 1 cup BBQ sauce
  • 1 cup frozen corn, thawed
  • 1/2 cup shredded cheddar cheese, divided
  • Salt and freshly ground black pepper to taste
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup cold unsalted butter, cut into cubes
  • 3/4 cup buttermilk
  • 1/2 cup shredded cheddar cheese, plus extra for topping

Instructions:

  1. Preheat oven to 375°F (190°C).
  2. Sauté onion and bell pepper in olive oil until softened.
  3. Add garlic, smoked paprika, and chili powder; cook briefly.
  4. Stir in chicken, BBQ sauce, corn, and 1/4 cup of cheddar cheese; season to taste.
  5. Pour mixture into the baking dish.
  6. Whisk together flour, baking powder, baking soda, and salt in a bowl.
  7. Cut in cold butter until mixture resembles coarse crumbs.
  8. Stir in buttermilk and cheddar cheese until just combined (do not overmix).
  9. Drop spoonfuls of biscuit dough evenly over the chicken filling.
  10. Sprinkle remaining cheddar cheese over the biscuits.
  11. Bake for 30-35 minutes, or until biscuits are golden brown and filling is bubbly.
  12. Let cool slightly before serving.
