- 1 red bell pepper, chopped

- 2 cups cooked, shredded chicken
- 1 cup BBQ sauce
- 1 cup frozen corn, thawed
- 1/2 cup shredded cheddar cheese, divided
- Salt and freshly ground black pepper to taste
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1/2 cup cold unsalted butter, cut into cubes
- 3/4 cup buttermilk
- 1/2 cup shredded cheddar cheese, plus extra for topping
Instructions:
- Preheat oven to 375°F (190°C).
- Sauté onion and bell pepper in olive oil until softened.
- Add garlic, smoked paprika, and chili powder; cook briefly.
- Stir in chicken, BBQ sauce, corn, and 1/4 cup of cheddar cheese; season to taste.
- Pour mixture into the baking dish.
- Whisk together flour, baking powder, baking soda, and salt in a bowl.
- Cut in cold butter until mixture resembles coarse crumbs.
- Stir in buttermilk and cheddar cheese until just combined (do not overmix).
- Drop spoonfuls of biscuit dough evenly over the chicken filling.
- Sprinkle remaining cheddar cheese over the biscuits.
- Bake for 30-35 minutes, or until biscuits are golden brown and filling is bubbly.
- Let cool slightly before serving.
