Ingredients:
- 1 large head of cauliflower (about 2 lbs / 900g), cut into 1-inch florets
- 1 cup (125g) all-purpose flour (plus extra for dusting)
- 1/2 cup (60g) cornstarch
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup (240ml) water, cold
- Vegetable oil, for frying (approx. 4 cups / 1 litre)
- 1/2 cup (120ml) sweet chili sauce (store-bought or homemade - Mae Ploy is a good one)
- 2 tablespoons soy sauce (low-sodium preferred)
- 1 tablespoon rice vinegar
- 1 tablespoon honey or maple syrup (for vegan option)
- 1 teaspoon sesame oil
- 1 clove garlic, minced
- 1/2 teaspoon ginger, grated
- 1/4 teaspoon red pepper flakes (optional, for extra heat)
- Sesame seeds (optional)
- Chopped green onions (optional)
Instructions:
- Wash and cut the cauliflower into bite-sized florets. Dry thoroughly.
- In a large bowl, whisk together flour, cornstarch, baking powder, salt, and pepper. Gradually whisk in cold water until a smooth batter forms. It should be the consistency of pancake batter.
- Heat vegetable oil in a large pot or deep fryer to 350°F (175°C).
- Dust the cauliflower florets lightly with flour. Dip the florets into the batter, ensuring they are fully coated. Carefully drop the battered florets into the hot oil in batches, being careful not to overcrowd the pot.
- Fry for 3-5 minutes, or until golden brown and crispy. Remove with a slotted spoon or spider and place on a paper towel-lined baking sheet to drain excess oil.
- While the cauliflower is frying, whisk together sweet chili sauce, soy sauce, rice vinegar, honey/maple syrup, sesame oil, garlic, ginger, and red pepper flakes (if using) in a small saucepan.
- Bring the sauce to a simmer over medium heat. Cook for 2-3 minutes, or until slightly thickened.
- Add the fried cauliflower bites to a large bowl. Pour the sweet chili sauce over the cauliflower and toss gently to coat evenly.
