Ingredients:

  • 3 large Lebanese-style pita breads (approx. 510g total)
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp fine sea salt
  • 1/4 tsp garlic powder
  • 1 tbsp za'atar
  • 1/4 tsp sumac

Instructions:

  1. Preheat your oven to 350°F (175°C).
  2. Lay the pita breads flat on a cutting board and cut each pita into 6 or 8 equal triangles.
  3. In a small bowl, whisk together the olive oil, fine sea salt, garlic powder, za'atar, and sumac until emulsified.
  4. Line a large rimmed baking sheet with parchment paper and place the pita triangles in a single layer.
  5. Using a pastry brush, apply a thin, even coat of the seasoned oil mixture to the top of each piece, avoiding pooling in the center.
  6. Bake on the center rack for 5–7 minutes until the edges begin to turn pale gold.
  7. Remove the tray and quickly flip each triangle using tongs.
  8. Return to the oven for another 5–7 minutes until they reach a mahogany-colored finish and a rigid texture.
  9. Remove from oven and let cool on the pan for 5 minutes to set the structure.
