Ingredients:
- 3 large Lebanese-style pita breads (approx. 510g total)
- 3 tbsp extra virgin olive oil
- 1/2 tsp fine sea salt
- 1/4 tsp garlic powder
- 1 tbsp za'atar
- 1/4 tsp sumac
Instructions:
- Preheat your oven to 350°F (175°C).
- Lay the pita breads flat on a cutting board and cut each pita into 6 or 8 equal triangles.
- In a small bowl, whisk together the olive oil, fine sea salt, garlic powder, za'atar, and sumac until emulsified.
- Line a large rimmed baking sheet with parchment paper and place the pita triangles in a single layer.
- Using a pastry brush, apply a thin, even coat of the seasoned oil mixture to the top of each piece, avoiding pooling in the center.
- Bake on the center rack for 5–7 minutes until the edges begin to turn pale gold.
- Remove the tray and quickly flip each triangle using tongs.
- Return to the oven for another 5–7 minutes until they reach a mahogany-colored finish and a rigid texture.
- Remove from oven and let cool on the pan for 5 minutes to set the structure.
