Ingredients:
- 1 cup (125g) all-purpose flour
- 1 cup (240ml) water
- 1/2 cup (113g) unsalted butter, cut into cubes
- 1/4 cup (50g) granulated sugar
- 1/4 teaspoon salt
- 1 teaspoon vanilla extract
- 2 large eggs
- 1/2 cup (100g) granulated sugar
- 2 teaspoons ground cinnamon
- 2 tablespoons unsalted butter, melted
Instructions:
- Combine water, butter, sugar, and salt in a saucepan. Bring to a boil over medium heat, stirring until butter is melted.
- Remove from heat and add flour all at once. Stir vigorously until a smooth dough forms.
- Return to low heat and cook, stirring constantly, for 1-2 minutes to dry the dough slightly.
- Transfer dough to a mixing bowl and let cool slightly (5-10 minutes). Stir in vanilla extract.
- Beat in eggs one at a time, ensuring each egg is fully incorporated before adding the next. The dough should be smooth and pipeable.
- Preheat oven to 400°F (200°C). Line baking sheets with parchment paper or silicone baking mats.
- Transfer dough to a piping bag fitted with a star tip. Pipe bite-sized portions (about 1-inch long) onto the prepared baking sheets.
- Bake for 15-18 minutes, or until golden brown.
- While churro bites are baking, prepare the cinnamon-sugar mixture. Combine sugar and cinnamon in a shallow dish.
- Melt 2 tablespoons of butter in a separate shallow dish.
- Once the churro bites are baked, let them cool slightly.
- Dip each churro bite in melted butter, then roll in cinnamon-sugar to coat evenly.
