Ingredients:

  • 1.5 lbs boneless, skinless chicken breasts
  • 2 cups cherry tomatoes
  • 4 cloves garlic, smashed and peeled
  • 3 tbsp extra virgin olive oil
  • 1 tbsp balsamic vinegar
  • 1 tsp dried oregano
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 3/4 cup shredded mozzarella cheese
  • 2 tbsp fresh basil leaves, torn
  • 1 tbsp fresh lemon juice

Instructions:

  1. Preheat oven to 400°F (200°C). In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt, and pepper.
  2. Place the chicken breasts in the center of a 9x13 inch baking dish and arrange the whole cherry tomatoes and smashed garlic cloves in the spaces surrounding the meat.
  3. Drizzle the balsamic-oil mixture evenly over the chicken and vegetables, ensuring the chicken is fully coated.
  4. Bake for 20–25 minutes until tomatoes have burst and the chicken reaches an internal temperature of 165°F (74°C).
  5. Remove from oven, sprinkle shredded mozzarella over the chicken, and broil for 2–3 minutes until the cheese is bubbling and golden-brown.
  6. Drizzle with fresh lemon juice and scatter torn basil leaves over the top before serving.
