Ingredients:
- 1.5 lbs boneless, skinless chicken breasts
- 2 cups cherry tomatoes
- 4 cloves garlic, smashed and peeled
- 3 tbsp extra virgin olive oil
- 1 tbsp balsamic vinegar
- 1 tsp dried oregano
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 3/4 cup shredded mozzarella cheese
- 2 tbsp fresh basil leaves, torn
- 1 tbsp fresh lemon juice
Instructions:
- Preheat oven to 400°F (200°C). In a small bowl, whisk together the olive oil, balsamic vinegar, dried oregano, salt, and pepper.
- Place the chicken breasts in the center of a 9x13 inch baking dish and arrange the whole cherry tomatoes and smashed garlic cloves in the spaces surrounding the meat.
- Drizzle the balsamic-oil mixture evenly over the chicken and vegetables, ensuring the chicken is fully coated.
- Bake for 20–25 minutes until tomatoes have burst and the chicken reaches an internal temperature of 165°F (74°C).
- Remove from oven, sprinkle shredded mozzarella over the chicken, and broil for 2–3 minutes until the cheese is bubbling and golden-brown.
- Drizzle with fresh lemon juice and scatter torn basil leaves over the top before serving.
