Ingredients:

  • 3 cups (450g) cooked chicken breast, cubed or shredded
  • 1/2 cup (50g) celery, finely diced
  • 1/4 cup (40g) red onion, minced
  • 1/4 cup (40g) fresh cilantro or parsley, chopped
  • 1 large (150g) ripe avocado, pitted and scooped
  • 1/3 cup (80g) plain Greek yogurt
  • 2 tbsp (30ml) fresh lime juice
  • 1 tbsp (15ml) extra virgin olive oil
  • 1/2 tsp (3g) garlic powder
  • 1/2 tsp (3g) kosher salt
  • 1/4 tsp (1g) cracked black pepper

Instructions:

  1. Dice the cooked chicken into uniform 1/2-inch cubes. Finely mince the celery and red onion.
  2. In a medium bowl or small food processor, combine the avocado, Greek yogurt, lime juice, olive oil, garlic powder, salt, and pepper. Blend or mash until the mixture is completely smooth and velvety.
  3. Place the cubed chicken, celery, onion, and herbs into a large mixing bowl. Pour the avocado emulsion over the top and gently fold the ingredients together with a rubber spatula until fully coated.
